Here's a warning to all vegetarians, vegans and people who may not like eating various parts of cows. This delicious soup of my dreams may give you nightmares.

Less than 24 hours ago I was lucky enough to be sitting in front of this glorious bowl of 'Pho Dac Biet' or as I like to call it 'Pho, uhh, the number 28?' at Saigon & Tokyo on Central Ave in Dover.

It's labeled as Meat Combo Noodle Soup and has an unbelievably delicious assortment of shaved steak, tripe and beef tendon.

Beef tendon is my absolute favorite component of this heavenly rice noodle broth. I've had this pho in San Diego, Las Vegas and Boston and not any of those have been as good as the one I had yesterday.

I refer to a Pho with a good deal of tendon in it as 'having a nice tendoncy' which is superior to consistency. If you love it like I do, Saigon & Tokyo's 'Pho Dac Biet' will rock your world!
