I grew up in a conservative household as far as food was concerned. My mom put the family on what seemed like an 8 dinner rotation (just so we wouldn't have the same dinner on the same night each week), and that rotation included spaghetti as well as scrambled hamburg as entrees.

So when Mexican restaurants started becoming more and more popular twenty or so years ago, I was all in. And I've never turned back.

Even if you don't consider yourself a cook, there are some recipes on this list that are fairly easy to make and don't require a lot of time and effort, which is perfect for me.

From Garlic Beef Enchiladas, Steak Tortillas to Mexican Lasagna, these recipes are are simple, tasty, and make a lot of food.

Now I'm starving.
