Yea, that's right, the University of New Hampshire and Head Brewer at the Portsmouth Brewery, Matt Gallagher, have joined forces to create, Selkie, a beer made with sugar kelp.

What a cool project! As the story goes, according to the video, Smuttynose Brewing approached Michael Chambers, a Research Scientist from UNH and New Hampshire Sea Grant, to develop a beer brewed with kelp.

UNH researchers harvested 60 pounds of sugar kelp, which is apparently very healthy, and gave it to the brewers so they could create, Selkie.
