It's National Grilled Cheese Day today!

I love that we have national days for my favorite things.  Grilled cheese is definitely on that list!  I'm not sure who DECLARES these days, but whatever, I think they're fun and LORD KNOWS we need more fun in our lives, amirite?

When I went to Ireland in 2003-ish, I had the best grilled cheese I ever had. I was a vegetarian at the time and travelling to a country like Ireland where there are farmers everywhere raising goats, sheep and cows - all for the consumption of their population, it's kinda hard to find restaurants that actually have vegetarian options that aren't just the bread bowl.

I did end up finding a bar (there are pubs EVERYWHERE in Ireland) that had grilled cheese on their menu, but they don't call them grilled cheese, they call them, toasted cheese.

Weird, right?

I asked the bartender if he could put a slice of tomato and onion on the toasted cheese.  He looked at me a little sideways, but said, "Shure, Lass. I do dat fer ya."

GREAT!  I ended up ordering not one, but two, with two Guinness on tap.  That meal still lives on my thighs.

A friend of ours suggested we try MAYO on the outside of the bread when we toast it, instead of butter. I don't know about that, but it can't be any worse for your system if it's mayo, so I think I'll give it a try.

No matter which way you celebrate National Grilled Cheese day, I suggest you have a Guinness on tap with it.
