What gives them their unique color?
Well the answer is quite technical but to put it in laments terms, they are born with a genetic mutation that leads to an overproduction of the protein that binds to the red pigment, turning it blue.
According to an article by Brainly, the mutation that causes a lobster to be blue is classified as a helpful mutation because it increases the chances of breeding by making the lobster more attractive to the opposite sex. If I were a lobster I would definitely be into a blue lobster as long as he had a good personality to match his striking good looks.
