If you are unable to head out to your favorite Mexican restaurant to celebrate Cinco de Mayo, you can celebrate at home with these easy to make Mexican dinner recipes.

I grew up in a conservative household as far as food was concerned. My mom put the family on what seemed like an 8 dinner rotation (just so we wouldn't have the same dinner on the same night each week), and that rotation included spaghetti as well as scrambled hamburg as entrees.

So when Mexican restaurants started becoming more and more popular twenty or so years ago, I was all in. And I've never turned back.
