Today is National Spinach Day. In an effort to improve the reputation of the much maligned leafy green, I'm here to say that THE WORST thing you can do is boil it.

I hated the stuff for years because I always had it boiled, which left it bitter with a hideous texture. This cooking method also works wonders for kale as well.
