Owner Gregg Schweitzer is a Portsmouth resident who has many years experience in the restaurant business.

He told Seacoastonline that he's been planning this type of deli for years:

“All our food will be made from scratch,” Schweitzer said. “Corned beef, brisket, roast beef and turkey will be cooked in the deli’s kitchen.” Bubby’s is getting smoked fish from Acme in Brooklyn, as well as pastrami, breads and bagels from New York. Salami and hot dogs will be from the kosher Hebrew National brand. Soups include chicken with matzo balls (“Jewish penicillin,” Schweitzer calls it), borscht, beef chili and a soup of the day. Bubby’s will have locally sourced tongue that will be brined and cooked on the premises."

At first, the deli will be open six days a week, from 7am to 4pm. Schweitzer plans to eventually be open seven days a week. Breakfast will be served all day along with traditional lunch sandwiches in addition to the mouth watering foods you think about when going to a NY Style deli.
