I'm always continuing my search for hidden foodie gems across New Hampshire and Dahab Falafel Co. had been sitting on my must-try list for way too long!

After the first bite of their falafel wrap... I immediately said to myself, "Why on earth did I wait so long!?"

What makes Dahab Falafel Co. special isn't JUST the food; it's the story behind it.

According to the food truck's website, owner Asi Adorian grew up in Israel before spending years living throughout "Europe, South America, New York City, and eventually New Hampshire, where he settled in 1999." Along the way, he found himself missing the simple Middle Eastern street food he grew up eating. Even though he could find versions of falafel and hummus in local restaurants, they never quite captured the flavors he always remembered.

So, he decided to recreate them himself!

After perfecting every recipe, he had friends and family taste-test his plates. That eventually led to Dahab Falafel Co. officially opening in 2022, bringing those authentic flavors to food truck fans across the Granite State, the website stated.

Adorian said, "Middle Eastern food in its nature is not overly sophisticated; it consists of basic ingredients, like chickpeas, sesame, eggplant, flour, herbs, and spices, but it is the quality of the ingredients and the cooking techniques that turn simple into magic."

And let me just say, the food I tasted was in fact that! Magical.

I ordered the falafel wrap, and from the very first bite, it tasted incredibly fresh. The falafel had that perfect balance of being crispy on the outside while staying soft and flavorful inside. Packed with hummus, Israeli salad (tomatoes, cucumbers, tossed in lemon juice and olive oil), and even red cabbage salad! Every bite gave you a mouthful of fresh vegetables and with outstanding sauces that made this handheld treat *chef's kiss*.

I'm the condiment queen and I ended up dousing my wrap with all house-made sauces: tahini (creamy nutty), schug (spicy garlic) and tamba (tangy tumeric and cumin). Oh, and even their wrap is homemade!

You can absolutely tell there's a lot of care behind every ingredient. Nothing tasted like an afterthought.

Dahab Falafel Co. is one of those food trucks that's worth seeking out. It's the kind of meal that reminds you simple ingredients can be some of the best food you'll eat.
