I like Intervale Pancake House. Took my rowdy little kids there lots of times, and the food was great. They make syrup right there too.
It’s busy during ski season (Pats Peak is its neighbor) but weekdays are when I usually went. The folks there are often the kind of people who have been going there for ages.

New Hampshire Maple Syrup is the Absolute Best in the Country
Here's the skinny on NH maple syrup straight out of the mouth of Andrew Chisholm, President of the NH Maple Association and my friend. Andrew said that there is NO blending with NH Maple syrup.
Other places blend all syrup together from the associations and slap a sticker on it that says, for instance, Vermont Maple Syrup. Here in New Hampshire, the labels will all specify what farm it came from and you can bet your life that's where it came from.
Intervale Farm Pancake House is worth a the drive from anywhere. From Portsmouth, NH, Henniker is about an hour and 20 minutes. From Portland, Maine, it's about 2 hours.
