The Secret Ingredient in My Veggie Mac Salad Revealed
Joe Limardi and I recently went head to head in a chicken parm battle we called, "PARMEGEDDON!" Joe was the clear winner. His Italian roots were too much for this French / Irish hybrid. To his credit, he agreed to try my veggie / mac salad that admittedly looks like a bad Jackson Pollock painting.
Here's the story behind this latest creation from the Sullivan kitchen - it was a very long day. I worked here at the station until late afternoon, then went to hot yoga with A-Train, got home and remembered that we had a company picnic the next day. I had agreed to bring in "veggie salad," as specified on the sign up sheet. I didn't have good lettuce in the house, so I decided to improvise.
I sauteed summer squash and zucchini with a little evoo, salt and pepper, cooked some pasta, celery, parm cheese aaaaaand...... A PACKAGE OF NEAR EAST TABOULEH WHEAT SALAD.
It's delicious! Joe tried some yesterday and he liked it!
