...... or not.

I am a meat-eater, but I will admit, I do feel like I could live forever not eating meat with recipes like this.

I had a few people over on Saturday night and needed to make food for both meat eaters and vegetarians. Comfort food, yet healthy, I thought I could come up with a recipe for Shepard's pie using lentils, veggies and sweet potatoes.  I may have seen a similar recipe somewhere, but I don't remember where.  I mighta-been here.

Anyway, here’s the recipe.  There aren’t any measurements. Sorry- I just kind of put it together. Sauté onions, celery, garlic in a pan with some EVOO, salt & pepper- add carrots, green pepper, cauliflower and whatever other veggies you like. Let that cook til veggies are soft. Add a whole package of cooked lentils. Add spices like "Camper's Mix," - a touch of soy sauce - maybe some hot sauce, set aside. Boil 5 sweet potatoes, 5 white potatoes, mash, add butter (or not if you want to make it vegan) set aside. Put lentil mixture in a big casserole pan, layer mashed potatoes over the top, bake for about 35-40 min at 350. Eat!
